It is as per the scriptures. Śrī Mahāgaṇapati marks the start of the Kuṇḍalinī ascent and Śrī Ucchiṣṭa Mahāgaṇapati is beyond the Sahasrāra.

Namasthe Sir, I have small confusion regarding Vinoyoga . I thought in the vinyoga devatha should be uchista Ganesha but it’s showing śrīmahāgaṇapatirdevatā - is there any reason why it is like that or I am learning this incorrectly?

Please follow the directions from your initiating guru. To the best of my knowledge, this kavacam should be recited as is upon seeking due permission from your guru to practice the same. My sincere suggestion is to practice the Śrī cakra Āvaraṇa pūja and experience its benefits before venturing into advanced stotras such as these, unless otherwise directed by your guru to do so.

in the end we have mahasodashi mantra so can we replace the om with the one we are initiated into?

Not to my knowledge. If you are initiated into the associated mantra(s), then this pūja is necessary.

You are eligible for this as well. If there is any stotra that is associated with a different mantra, then an initiation is required. For this particular stotra, you are eligbile.
