What is the difference between meditation/contemplation and recitation?

For meditation and contemplation purposes, only one name should be sufficient. For recitation purposes, the entire list of names must be read. If time doesn't permit, go ahead and recite as many as you can and contemplate upon the meanings.

Doing mantra japa or meditation for six hours, that too in the night and wee hours may be difficult. In that case, one can do mantra japa and meditation during those 90 minutes of total eclipse.

Which Das Mahavidya would you say deals more with knowledge like sciences, Tara or Matangi?

Yes you can. There is no harm. You can perform regular puja or recite their stotras or kavachas, if you have them. The mantras for these deities are tantric in nature and the due process of initiation, is strongly suggested.
